Defenitly Resident Evil, the first one in particular.
Resident Evil (PS1): This game made horror not just a movie genre, and it probably the first game to really scare the the sh*t out of gamers.
La la la, walking through a hallway minding my own business-- CRASH!
ZOMBIE DOG!!!
Resident Evil (GameCube remake): This game made the Resident Evil look sexy! Revamped environments, creepier looking monsters, and you are no longer called "the master of unlocking"
another place deserving game (^_^)

Two words and one number. S-o-u-l C-a-l-i-b-u-r 2. Not only are the graphics amazing they were nice enough to give it a personal character for each system that was a traditional character on that system's games. Except spawn for X-Box. Who thought up that?

How about Ikaruga for the GameCube? Amazing action,a very cool white/black system,and awesome graphics.

If we are going to go with Ikaruga, then why not it's hard-to-find prequel, Radiant Silvergun for the Sega Saturn? That game was equally frustrating and difficult as it's successor. I give another vote for Xenogears for the PSX. That game is still my favorite RPG to date.

Crazy Taxi, it's too funny not too. Chrono Trigger and Cross are an awesome set of games. They should be not only for plot, but because the battle system is pretty cool too.
Ryu: X-Box doesn't really have a character to represent, y'know? It's not like it has like Link or something.

If you're gonna go with Crazy taxi, then why not also Simpsons: Hit and run? You've got the same gameplay w/ hilarious Simpsons antics.
As far as Xbox goes, I don't really play it much, being an RPG fan and all(they don't have ANY Japanese-style RPGs).

I shall recommend two RPGs for SNES that I feel are very under-rated, depsite the insane fan base of the first one...
Earthbound: The battle system sorta sucks, but seriously, such a light hearted and messed up RPG is really unique. It even surpasses the Mario RPGs in the way of humour in my opinion. Also, it has a semi-decent storyline, and some great music. Its just a really different kind of game, sorta like if WarioWare was an RPG I guess....
E.V.O : This game has you start off as a fish. You then go and kill other fish, and gain EXP( in the raw form of a chunk of meat sprite). You then use this EXP to evolve certain aprts of your body, you then basically customize this fish. You customize through all these fish levels, and suddenly, you are put into an amphibian level, where you end up evolving legs, and so on. I assume you can extrapolate the rest. There is just so much customization, a, fair, although subtle storyline, and quite a bit of humour in this Enix (I think) action-RPG. One of THE most underplayed games of all time in my opinion. It does get hard though, but no game, except mabey Cubivor has ever done anything like it. Truely unique. Also, good music and art aswell.
Nothing beats fighting a Yeti, then beating another Yeti, while being some sorta bad-arse salamander with horns, and then seeing a baby Yeti run onto the screen screaming "Mommy?, Mommy?!!" as the chunk of meat remains on the screen. What a, uhm, wierd, and, pretty entertaining moment.....

Actually, that reminds me of another suggestion to the list:
WarioWare Inc.
It's like -- you take bits and pieces from other games, put get them addicted to speed.

There were multiple Mario RPGs? I never knew that! But the one I have I would recommend.(Legend of the Seven Stars, I think it's called)

I guess you could say that there are 4 mario rpgs, the first: Super Mario RPG, 2nd: Paper Mario, 3rd: Mario and Luigi: Superstar Saga, and 4th: Paper Mario: Thousand Year Door(Super Mario RPG 3 in Japan).
I've played E.V.O, that game was way cool! Always fun to fight as a fish and a dinosaur. ;D Another good SNES rpg would be Breath of Fire and it's sequel. Dragons are always cool.

On the subject of Mario, what about Mario & Luigi? That game is hilarious, plus you can dodge every attack!
Oh, and the 2 Chrono games are amazing to me as well.

I was quite surprised to find the two Chrono games were related too, 'cause they're completely different. They only thing that says sequel about them are the titles. And a few references here and there.
